Pineapple Chicken and Rice

A delightful dish combining sweet pineapple, savory chicken, and aromatic jasmine rice, perfect for a quick weeknight dinner.

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion and minced garlic; sauté until translucent (2-3 minutes).
  3. Add the cubed chicken; cook until browned on all sides (5-7 minutes).
  4. Add red bell pepper and pineapple; cook for a few minutes.
  5. Add jasmine rice and chicken broth; stir and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes.
  7. Remove lid and fluff rice with a fork before serving.

Notes

Serve with fresh chopped cilantro or green onions for garnish. Lime slices can add extra zing.
