Pineapple Coconut Mojito

A refreshing cocktail that combines the sweet taste of pineapple and coconut with the coolness of mint, perfect for hot days and summer parties.

  • 1/2 lime, cut into quarters
  • 1/4 cup fresh mint
  • 1 ounce coconut rum
  • 2 ounces pineapple juice
  • 1 tablespoon lite coconut milk
  • 2 ounces club soda
  • Ice
  • Lime wedge (for garnish)
  • Pineapple slice (for garnish)
  • Fresh mint (for garnish)

Instructions

  1. Prepare the Ingredients: Cut lime into quarters and measure out the fresh mint, rum, pineapple juice, and coconut milk.
  2. Muddle the Lime and Mint: In a cocktail shaker, add lime quarters and fresh mint, then gently press down with a muddler or spoon to release juices.
  3. Add the Liquids: Pour in the coconut rum, pineapple juice, and coconut milk.
  4. Add Ice: Fill the shaker with ice to chill the drink.
  5. Shake It Up: Shake vigorously for about 15 seconds to mix the flavors.
  6. Serve the Drink: Fill a glass with ice and pour the mixture over it, leaving some space at the top.
  7. Top with Club Soda: Gently pour in the club soda.
  8. Garnish: Add a lime wedge, mint sprig, and a slice of pineapple for decoration.

Notes

Best enjoyed fresh while cold and fizzy. Can store the mixture (without ice and club soda) in the refrigerator for up to 24 hours.
