Pink Berry Winter Refresher

A delicious and refreshing winter drink combining coconut water, pink pitaya, and lime juice, garnished with fresh mint and berries.

Ingredients

  • 1 cup coconut water
  • 1/3 cup pink pitaya puree
  • 1 tbsp lime juice
  • Frozen berry ice cubes
  • Fresh mint for garnish
  • Berries for garnish

Instructions

  1. Gather all your ingredients.
  2. In a mixing bowl, combine coconut water, pink pitaya puree, and lime juice.
  3. Mix the ingredients well until fully blended.
  4. Prepare glasses by filling them with frozen berry ice cubes.
  5. Pour the mixture over the ice cubes in each glass.
  6. Garnish with fresh mint leaves and extra berries on top.

Notes

Best enjoyed fresh, but can be stored in the fridge for up to two days in an airtight container.
