Pink Lemonade Macarons

Delightful French macarons that blend sweet and tart notes of pink lemonade, perfect for any gathering or a personal treat.

  • 1 cup almond flour
  • 1¾ cups powdered sugar
  • 3 egg whites (room temperature)
  • ¼ cup granulated sugar
  • Pink gel food coloring
  • ½ cup butter (softened)
  • 1½ cups powdered sugar (for filling)
  • 2 tbsp lemon juice
  • Zest of ½ lemon

Instructions

  1. Sift together the almond flour and powdered sugar in a mixing bowl.
  2. In a separate bowl, beat the egg whites until foamy and gradually add granulated sugar until stiff peaks form.
  3. Fold in the dry almond flour mixture and add pink gel food coloring carefully.
  4. Pipe small rounds of the batter onto parchment-lined baking sheets.
  5. Let the piped rounds rest for about 30 minutes.
  6. Preheat the oven to 300°F (150°C) and bake for 12-15 minutes.
  7. Prepare the lemon filling by beating together softened butter, powdered sugar, lemon juice, and lemon zest until creamy.
  8. Once cooled, sandwich the macaron shells with the lemon filling and enjoy.

Notes

For a cleaner profile, use coconut flour instead of almond flour and natural sweeteners for the filling to reduce sugar content.
