Pink Lemonade Thumbprint Cookies

Bright and tangy cookies with a pink lemonade glaze, perfect for summer gatherings.

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar
  • 2 tablespoons pink lemonade mix
  • 1 to 2 tablespoons milk (as needed for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Whisk together the flour, salt, and baking powder in another bowl. Gradually mix the dry ingredients into the butter mixture.
  4. Add the lemon juice and lemon zest, mixing until combined.
  5. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  6. Use your thumb to create an indentation in the center of each cookie.
  7. Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool.
  8. Mix powdered sugar with pink lemonade mix and enough milk to reach a drizzleable consistency for the glaze.
  9. Fill each thumbprint indentation with the glaze. Let the glaze set before serving.

Notes

Store cookies in an airtight container for up to 4 days. Freeze for longer storage.
