Pistachio Coquito

A delightful twist on classic Coquito, blending coconut milk and dark rum with creamy pistachio gelato for a festive and unique drink.

  • 1 can Coconut Milk
  • 1 can Cream of Coconut
  • 2 cups (1 pint) pistachio gelato
  • 1 cup dark rum
  • 1 tsp. vanilla extract
  • ½ tsp. ground cinnamon
  • 2 cups ice
  • ¼ cup crushed salted pistachios

Instructions

  1. Prepare Your Blender: Start by gathering all your ingredients and setting your blender on a flat surface.
  2. Add the Liquids and Gelato: In the blender, pour in the coconut milk and cream of coconut. Add the pistachio gelato.
  3. Pour in the Rum: Next, add the dark rum to the blender.
  4. Add Flavoring: Now, add the vanilla extract and ground cinnamon to the mixture.
  5. Add Ice: Finally, throw in the ice cubes.
  6. Blend Until Smooth: Cover the blender and blend until the mixture is smooth and creamy, about 30 seconds.
  7. Serve in Glasses: Once ready, pour the mixture into six glasses.
  8. Garnish with Pistachios: Sprinkle crushed salted pistachios on top for garnish.

Notes

Best served chilled and can be customized with different flavors or milk alternatives.
