Pistachio-Crusted Brie Bites with Raspberry Honey Glaze

Delicious appetizer featuring creamy brie cheese, crunchy pistachios, and a sweet raspberry honey glaze.

  • 1 wheel brie cheese (8 oz / 225 g), cut into 1-inch cubes
  • ½ cup crushed pistachios (60 g)
  • 1 tbsp olive oil (15 ml)
  • 1216 mini phyllo cups or sturdy crackers
  • ¼ cup raspberry preserves (80 g)
  • 1 tbsp honey (15 ml)
  • 1 tsp lemon juice (5 ml)
  • Extra crushed pistachios (optional garnish)
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Toss the brie cubes in olive oil until they are well coated. Then, roll them in the crushed pistachios, making sure they are evenly coated.
  3. Place each coated brie cube into a phyllo cup and arrange them on the baking sheet.
  4. Bake for 8–10 minutes or until the brie has softened and the pistachios have turned golden brown.
  5. In a small saucepan, mix the raspberry preserves, honey, and lemon juice over low heat until smooth and combined.
  6. Once the brie bites are done, carefully spoon the warm raspberry glaze over each baked bite. Garnish with fresh herbs and extra crushed pistachios if desired.

Notes

Store leftover bites in an airtight container in the refrigerator for up to 3 days. Reheat to restore texture.
