Plum and Thyme Prosecco Smash

A fresh and fruity cocktail combining ripe plums, lemon, thyme simple syrup, and dry prosecco for a bright taste.

  • 2 Plums
  • 6 Thyme Sprigs
  • Juice from 1 Lemon
  • 4 Tbsp. Thyme Simple Syrup (1/2 Cup Sugar, 1/2 Cup Water)
  • 1 Bottle of Prosecco (or your favorite bubbly)

Instructions

  1. Make the thyme simple syrup: combine 1/2 cup sugar and 1/2 cup water in a small pan. Add 4 thyme sprigs. Heat until the sugar melts. Let cool, then remove thyme. This makes about 1/2 cup syrup.
  2. Peel and chop 2 plums into small pieces.
  3. Put the chopped plums in a shaker. Add 4 tablespoons thyme simple syrup and the juice from one lemon. Add a few thyme leaves if you like more herb flavor.
  4. Muddle the plums with the thyme simple syrup and lemon juice until all of the plum juices have been released.
  5. Fill the shaker with ice. Shake well for 10–15 seconds to chill and mix.
  6. Pour over crushed ice evenly between two glasses.
  7. Top off with prosecco and garnish with extra plum slices and thyme sprigs. Serve immediately.

Notes

This drink can be made lighter by reducing the syrup or using sugar-free options.
