Polish Kolaczki Cookies

Delightful soft and flaky Polish cookies filled with your choice of jam, preserves, or cheese, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup butter, chilled and diced
  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar (for dusting)
  • 1 cup your choice of filling (jam, preserves, or cheese)

Instructions

  1. In a large bowl, combine the flour, butter, and cream cheese. Mix until the dough is smooth.
  2. Wrap the dough in plastic wrap and refrigerate for at least one hour.
  3. Roll out the chilled dough to about 1/4 inch thickness on a floured surface.
  4. Cut the rolled dough into squares of roughly 2×2 inches.
  5. Place a teaspoon of filling in the center of each square.
  6. Fold two opposite corners of the square towards the center and press gently to seal.
  7. Preheat your oven to 350°F (175°C) and place the cookies on a lined baking sheet.
  8. Bake for about 15 minutes until golden brown.
  9. Cool on a wire rack and dust with granulated sugar before serving.

Notes

Kolaczki cookies pair wonderfully with tea or coffee and can be customized with different fillings.
