  • 2 tablespoons flaxseed meal
  • 1 tablespoon chia seeds
  • 1/4 teaspoon sea salt
  • 2 cups old-fashioned rolled oats (gluten-free if desired)
  • 1/4 cup white or dark chocolate chips (dairy-free options available)
  • 1 teaspoon coconut oil
  • Cinnamon (for sprinkling)

Instructions

  1. Prepare your ingredients: Gather all your ingredients and measure them out.
  2. Blend the mixture: Place all ingredients (except chocolate chips and coconut oil) in a food processor and pulse until well combined.
  3. Form the bites: Use a medium cookie scoop to form balls with the mixture and place on a baking sheet lined with parchment paper.
  4. Freeze the balls: Freeze the balls for about 30 minutes.
  5. Melt chocolate: Melt the chocolate chips and coconut oil in a microwave-safe bowl, stirring until smooth.
  6. Drizzle with chocolate: Drizzle melted chocolate over the bites and sprinkle with cinnamon.
  7. Final freeze: Return the bites to the freezer for another 10 minutes to harden the chocolate.
  8. Enjoy: Enjoy the bites straight from the freezer or after sitting at room temperature for 5 to 10 minutes.
