Purple Carrot Cake Oatmeal

A colorful and healthy twist on breakfast, this Purple Carrot Cake Oatmeal combines rolled oats with shredded purple carrots, brown sugar, and cinnamon.

  • 1/2 cup rolled oats
  • 1 cup milk or water
  • 1/4 cup shredded purple carrot
  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon
  • Walnuts (for topping)
  • Light glaze (for drizzling)

Instructions

  1. In a saucepan, mix together the rolled oats, milk (or water), shredded purple carrot, brown sugar, and cinnamon.
  2. Place the saucepan on medium heat. Stir occasionally and cook until it thickens to your liking, about 5 to 7 minutes.
  3. Once thickened, remove from heat, scoop the oatmeal into a bowl, and top with walnuts and a drizzle of light glaze.

Notes

Best served warm. Leftovers can be refrigerated for up to three days or frozen for up to one month.
