Raspberry Pistachio Parisian Macarons

Delightful French macarons filled with sweet raspberry jam and creamy pistachio butter, perfect for any occasion.

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 1/4 teaspoon salt
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1/2 cup pistachio butter
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a bowl, sift together the almond flour, powdered sugar, and salt.
  3. In a mixing bowl, whisk the egg whites until foamy. Gradually add the granulated sugar while whisking until stiff peaks form.
  4. Gently fold the dry mixture into the egg whites. Add the vanilla extract and food coloring if desired.
  5. Transfer the batter into a piping bag. Pipe small circles onto the prepared baking sheet.
  6. Let them sit for about 30 minutes to form a skin on the tops.
  7. Bake in the oven for 15-18 minutes. Let them cool completely before removing.
  8. Once cool, sandwich the macaron shells with raspberry jam and pistachio butter.
