Coconut Mango Popsicles

Creamy, juicy popsicles that taste like summer holidays at the beach, made with fresh mango and coconut milk.

Ingredients

  • 2 ripe mangoes
  • 1 can full-fat coconut milk
  • Honey or maple syrup (to taste)
  • Pinch of salt
  • Optional: dash of vanilla or fresh lime juice

Instructions

  1. Peel the mangoes and slice off the flesh, then blend until smooth.
  2. Mix in the coconut milk and adjust sweetness with honey or maple syrup.
  3. Add a pinch of salt and optional vanilla or lime juice.
  4. Pour the mixture into popsicle molds, filling them appropriately and shaking to remove air pockets.
  5. Insert sticks and freeze for at least five hours.
  6. To remove, run the mold under warm water for a few seconds.

Notes

Use very ripe mango for maximum sweetness. Let pops thaw a minute for easier removal from molds.
