Refreshing Lime in the Coconut Cocktail

A delightful cocktail that combines the rich taste of coconut milk with zesty lime, perfect for any summer gathering.

Ingredients

  • 14 oz can of Lite Coconut Milk
  • 2 Fresh Limes, juiced
  • 1 1/5 cups Crushed Ice
  • 3 Tbsp White Sugar
  • 4 oz Rum or Rum Cream
  • 1 fresh lime, sliced (for rim, optional)
  • Toasted Coconut Flakes (for rim, optional)
  • Light Corn Syrup (for rim, optional)

Instructions

  1. Gather all your ingredients and equipment on a clean countertop.
  2. Open the can of lite coconut milk and pour it into the blender.
  3. Juice the two fresh limes and add the juice to the blender.
  4. Add 1 1/5 cups of crushed ice into the blender.
  5. Measure and add 3 tablespoons of white sugar to the blender.
  6. Pour in 4 oz of rum or rum cream.
  7. Blend all the ingredients until smooth.
  8. For rimming the glasses, dip the rim in light corn syrup and then into toasted coconut flakes.
  9. Garnish each drink with a fresh lime wedge on the rim of the glass.
  10. Pour the blended cocktail into the prepared glasses and enjoy!

Notes

Best enjoyed fresh. Can be stored in the refrigerator for up to 24 hours.
