  • 12 oz fettuccine or penne pasta
  • 23 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 1 cup canned pumpkin puree
  • 3/4 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Reserved pasta water (as needed)
  • Extra Parmesan, pumpkin seeds, or fresh herbs for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Reserve 1 cup pasta water before draining.
  2. In a large skillet, heat butter or olive oil over medium-low heat. Add garlic and sauté for 1–2 minutes until fragrant, not browned.
  3. Add pumpkin puree to the skillet. Stir and cook for 2–3 minutes to deepen the flavor.
  4. Whisk in heavy cream and stir until smooth. Let simmer briefly.
  5. Remove from heat. Stir in Parmesan cheese, nutmeg, salt, and pepper. Adjust seasoning to taste.
  6. Add drained pasta to the skillet and toss to coat. Use reserved pasta water to thin the sauce if needed.
  7. Serve hot, garnished with extra Parmesan, toasted pumpkin seeds, or fresh herbs.

Notes

Use freshly grated Parmesan for the best texture and flavor. This recipe is vegetarian and can be made vegan using plant-based cream and cheese alternatives. Store leftovers in the fridge for up to 3 days and reheat gently with added cream or milk.
