Roasted Carrots with Maple Ricotta & Spiced Butter

  • 4 medium-sized carrots
  • 1 cup ricotta cheese
  • 2 tablespoons maple syrup
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the carrots into even pieces.
  3. Toss the carrots with olive oil, salt, and pepper in a bowl.
  4. Spread the tossed carrots on a baking sheet in a single layer.
