Roasted Peach Chicken Salad

A delightful mix of flavors and textures combining roasted peaches and savory chicken, perfect for warm days or any occasion.

  • 3 medium peaches, pitted and thinly sliced
  • ½ cup peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic, minced
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes
  • 1 ½ pounds boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon extra virgin olive oil
  • 5 ounces spring mix
  • 1 small red onion, thinly sliced
  • ½ cup crumbled feta
  • ½ cup walnuts, roughly chopped
  • 1 small cucumber, thinly sliced
  • Balsamic vinaigrette, for serving
  • Parsley, chopped for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. Spread the sliced peaches on the prepared baking sheet. Drizzle with peach preserves and toss gently to coat. Roast for about 15-20 minutes, or until tender and slightly caramelized.
  3. In a small bowl, mix together olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes for the glaze. Whisk until combined and set aside.
  4. Season the chicken breasts with kosher salt, pepper, paprika, garlic powder, and red pepper flakes. In a skillet, heat olive oil over medium heat. Add the seasoned chicken and cook for 6-7 minutes per side or until fully cooked (internal temperature reaches 165°F/75°C). Let it rest, then slice.
  5. In a large bowl, combine spring mix, thinly sliced red onion, crumbled feta, walnuts, and cucumber. Add roasted peaches and sliced chicken, then drizzle with the peach glaze and toss gently.
  6. Garnish with chopped parsley and serve with balsamic vinaigrette on the side.

Notes

This salad can be customized with different proteins or fruits. For meal prep, store the dressing separately to keep the greens fresh.
