Rotisserie Chicken Mushroom Soup

  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent. Stir in minced garlic and cook for an additional minute.
  2. Add sliced mushrooms and cook until softened.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the shredded rotisserie chicken and let the soup cook for about 5 minutes.
  5. Stir in baby spinach and heavy cream, cooking until the spinach is wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh thyme.
