Salmon Rolls with Asparagus

A delightful dish that brings the freshness of the ocean to your plate, balancing rich flavors of salmon with the crispness of asparagus.

Ingredients

  • Fresh salmon fillets, sliced thin
  • Lemon zest and juice
  • Ricotta or cream cheese
  • Fresh basil, chopped
  • Garlic, minced
  • Salt and pepper to taste
  • Olive oil or melted butter
  • Fresh asparagus

Instructions

  1. Trim the woody ends from the asparagus and arrange them in a single layer on a lined baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  2. In a small bowl, blend the ricotta or cream cheese with lemon zest, garlic, chopped basil, salt, and pepper until creamy.
  3. Lay out each sliced salmon fillet, spread 1-2 tablespoons of cheese filling along the center, and roll up, tucking the seam underneath.
  4. Place salmon rolls seam side down over the bed of asparagus on the baking sheet. Drizzle with more olive oil and lemon juice.
  5. Bake in a preheated oven at 375°F for 18-20 minutes until salmon is firm and opaque.
  6. Scatter extra basil and lemon wedges before serving.

Notes

Choose quality ingredients and don’t overcook the salmon for best results. Consider garnishing with capers or toasted pine nuts for added flavor.
