Sausage Breakfast Casserole

A savory and hearty sausage breakfast casserole perfect for brunch or family breakfasts.

  • 1 pound sausage (Italian or breakfast)
  • 8 large eggs
  • 2 cups cheddar cheese, shredded
  • 1 cup whole milk or half-and-half
  • 4 cups day-old bread, cut into 1-inch cubes
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • Salt and pepper to taste
  • Optional spices (paprika, garlic powder)

Instructions

  1. Brown the sausage in a skillet over medium heat. Remove from casing if necessary and crumble while cooking.
  2. Use day-old bread, cut into 1-inch cubes, and toast it to absorb the egg mixture better.
  3. Sauté diced bell peppers and onions to reduce moisture.
  4. Grease a 9×13-inch baking dish.
  5. Layer toasted bread cubes or hash browns at the bottom, followed by cooked sausage and sautéed vegetables.
  6. Whisk eggs with milk, salt, pepper, and desired spices. Pour evenly over layers.
  7. Top with half the cheese, reserving the rest for later.
  8. Preheat oven to 350°F (175°C).
  9. Cover with foil and bake for 30-35 minutes. Remove foil, add remaining cheese, and bake an additional 10-15 minutes until set.
  10. Test for doneness by inserting a knife in the center; it should come out clean.

Notes

Use day-old bread for best results. Casserole can be made ahead and stored overnight in the fridge.
