Sausage Tortellini Soup

A comforting and delicious Sausage Tortellini Soup made with flavorful Italian sausage, creamy broth, and cheesy tortellini, perfect for any occasion.

  • 1 pound (454g) mild or sweet Italian sausage
  • 1 small yellow or white onion (diced)
  • 4 cloves garlic (minced)
  • 32 ounces (907mL) chicken stock
  • 3 cups (90g) baby spinach
  • 1 cup heavy cream or milk
  • 10 ounces (283g) refrigerated cheese tortellini
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the sausage until browned, crumbling it as it cooks.
  2. Transfer the browned sausage to a plate using a slotted spoon.
  3. Add the diced onion and minced garlic to the pot and cook until tender, about 5-7 minutes.
  4. Pour in the chicken stock and bring to a low simmer.
  5. Add the sausage back to the pot along with the baby spinach and heavy cream or milk. Simmer again.
  6. Stir in the cheese tortellini and cook according to package instructions, usually about 3-5 minutes.
  7. Remove from heat, adjust seasoning with salt and pepper, and let cool for 15 minutes before serving.

Notes

Serve hot, garnished with fresh herbs, and enjoy with crusty bread or a simple salad for a complete meal.
