Hawaiian Chicken Burgers with Grilled Pineapple Salsa

Bright and juicy Hawaiian Chicken Burgers topped with grilled pineapple salsa that will elevate your burger night.

Ingredients

  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp soy sauce
  • 1 fresh pineapple, sliced into rings
  • 1 red onion, diced
  • 1 jalapeño, seeded and diced
  • Juice of 1 lime
  • Burger buns (Hawaiian rolls recommended)
  • Mayo or sweet chili sauce (optional)

Instructions

  1. Mash the ground chicken with garlic, ginger, and soy sauce, then form it into patties.
  2. Heat a grill or skillet and cook the chicken patties for about 4 minutes on each side until fully cooked.
  3. While the patties are cooking, grill the pineapple rings until they have nice grill marks and are slightly caramelized.
  4. Chop the grilled pineapple and mix it with red onion, jalapeño, and lime juice to create the salsa.
  5. Assemble the burgers by placing the cooked patties on the buns and topping them with the pineapple salsa.

Notes

For a spicy kick, leave some jalapeño seeds in the salsa. Leftovers can be stored in an airtight container for up to three days.
