Savory Apple & Cheddar Galette with a Whole Wheat Crust

This delightful galette combines sharp cheddar cheese with sweet apples, all enveloped in a flaky whole wheat crust, creating a perfect balance of savory and sweet.

  • 1 1/2 cups whole wheat flour
  • 1/2 cup cold butter, cut into cubes
  • 35 tablespoons ice water
  • 1 cup grated sharp cheddar cheese
  • 2 medium apples, thinly sliced (Honeycrisp preferred)
  • 1 medium onion, caramelized
  • 1 egg (for egg wash)
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the whole wheat flour and salt, then add the cold butter. Use your hands or a fork to mix until crumbly.
  3. Gradually add ice water, mixing until the dough comes together, then chill in the refrigerator for 20 minutes.
  4. Roll the dough out on parchment paper into a rough circle.
  5. Layer the grated cheddar cheese on the crust, leaving a border for folding.
  6. Arrange the thinly sliced apples and caramelized onions on top of the cheese.
  7. Fold the edges of the crust over the filling, leaving the center exposed.
  8. Brush the crust with beaten egg for a golden finish.
  9. Bake in the preheated oven for about 30 minutes, until the crust is golden and the filling is bubbling.
  10. Let cool for 5 minutes before slicing and serving.

Notes

Feel free to experiment with different fillings such as pears or roasted squash. Chilling the dough is key for a flaky crust.
