Savory Cranberry & Pistachio Cheesecake Cups

A delightful blend of creamy cheesecake, tart cranberry, and crunchy pistachios in convenient cup form, perfect for parties and gatherings.

  • 1 cup savory crackers (like Ritz or water crackers), crushed
  • 1/4 cup unsalted butter, melted
  • Pinch of sea salt
  • 250g cream cheese, at room temperature
  • 1/4 cup crème fraîche or sour cream
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Cranberry sauce for topping
  • Chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the crushed crackers, melted butter, and a pinch of sea salt. Mix well.
  3. Press this mixture into the bottom of small cups or a muffin tin to form the crust.
  4. In another bowl, mix the cream cheese, crème fraîche, garlic powder, and onion powder until smooth.
  5. Spoon the filling into the crusts, smoothing the tops with a spatula.
  6. Bake in the preheated oven for 15-20 minutes, or until set.
  7. Allow to cool, then top with cranberry sauce and garnish with chopped pistachios.
  8. Serve chilled or at room temperature for the best flavor.

Notes

These cups can be made ahead of time and stored in the fridge for up to three days. They can also be frozen for up to two months.
