Sheet Pan Tofu with Cauliflower and Sweet Potatoes

A simple and delicious dish that combines tofu, cauliflower, and sweet potatoes for a nutritious and flavorful meal, all cooked on one pan for easy cleanup.

  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon paprika
  • 1 tablespoon cayenne
  • 1 tablespoon cumin
  • 1 tablespoon honey
  • 1/4 cup apple cider vinegar
  • 1 whole cauliflower head, cut into large florets
  • 1 block of extra-firm tofu, pressed and cut into cubes
  • 1 red onion, sliced
  • 2 medium sweet potatoes, peeled and cut into eighths

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small mixing bowl, combine the olive oil, salt, black pepper, paprika, cayenne, cumin, honey, and apple cider vinegar, and mix until smooth.
  3. In a large bowl, mix together the cauliflower florets, tofu cubes, sweet potato pieces, and sliced red onion. Pour the spice mixture over and toss until everything is evenly coated.
  4. Spread the mixture out evenly on a large baking sheet in one layer.
  5. Bake for 20 minutes, then flip everything over and bake for another 10 to 15 minutes until the sweet potatoes are tender and the tofu is slightly crispy.

Notes

Garnish with fresh herbs like parsley or cilantro for extra flavor. For a complete meal, serve with a side of salad or whole grains.
