Creamy Coleslaw

A simple and delicious creamy coleslaw that adds crunch and brightness to any meal.

  • 2 cups green cabbage, shredded
  • 2 cups purple cabbage, shredded
  • 1 cup carrots, grated
  • 1/2 cup mayonnaise
  • 1/2 cup plain yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large bowl, combine the shredded green and purple cabbage, grated carrots, and chopped parsley.
  2. In a separate bowl, mix together the mayonnaise, yogurt, apple cider vinegar, lemon juice, sugar, salt, and black pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss until evenly coated.
  4. Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  5. Serve alongside your favorite dishes or as a topping for sandwiches and tacos.

Notes
