Fermented Ginger Bug Soda

A refreshing homemade soda brewed with ginger, sugar, and your choice of flavorings, packed with probiotics for a healthy gut.

Ingredients

Scale
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons white sugar
  • 2 cups non-chlorinated water
  • 1 cup fruit juice (optional)
  • A pinch of salt (optional)

Instructions

  1. In a clean jar, combine two tablespoons of grated ginger with two tablespoons of sugar. Pour in about two cups of water and stir until the sugar dissolves. Cover loosely.
  2. Set the jar somewhere warm, adding another tablespoon of ginger and sugar each day. Stir well.
  3. After 4-5 days, strain off half a cup of the bug liquid.
  4. Pour your ginger bug starter into a clean bottle, add a cup of fruit juice or sweetened ginger water, and top with more water to fill.
  5. Seal the bottle tightly and let it sit on the counter for 2-4 days. Open carefully to check fizziness. If fizzy, place it in the fridge to slow fermentation.

Notes

Use fresh ginger for the best results. Taste test during fermentation to achieve your desired sweetness.
