Slow Cooker BBQ Beef

Melt-in-your-mouth Slow Cooker BBQ Beef, perfect for summer cookouts and feeding a crowd with budget-friendly beef chuck roast.

  • 3 pounds beef chuck roast, cut into 45 large pieces
  • 1 tablespoon oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 12 cloves garlic, finely minced
  • 1 cup your favorite BBQ sauce for cooking
  • 1 cup your favorite BBQ sauce for finishing
  • 1 cup ketchup (for homemade BBQ sauce, optional)
  • ⅓ cup water (for homemade BBQ sauce, optional)
  • ⅓ cup brown sugar (for homemade BBQ sauce, optional)
  • ⅓ cup apple cider vinegar (for homemade BBQ sauce, optional)
  • 1½ tablespoons Worcestershire sauce (for homemade BBQ sauce, optional)
  • 1½ tablespoons yellow mustard (for homemade BBQ sauce, optional)
  • 1½ teaspoons onion powder (for homemade BBQ sauce, optional)
  • 1½ teaspoons paprika (for homemade BBQ sauce, optional)
  • ¼ teaspoon black pepper (for homemade BBQ sauce, optional)
  • 1 clove minced garlic or ¼ teaspoon garlic powder (for homemade BBQ sauce, optional)

Instructions

  1. Make the BBQ sauce (if needed): Combine all sauce ingredients in a medium saucepan, simmer over medium-low heat for about 30 minutes until thick. Taste and adjust seasoning.
  2. Prep & season the beef: Cut the beef into 4–5 large pieces and season with salt and black pepper.
  3. Brown the beef: Heat oil in a skillet, brown 2–3 pieces of beef at a time for 6–8 minutes per side, then transfer to the slow cooker.
  4. Slow cook the beef: Sprinkle with brown sugar, apple cider vinegar, Worcestershire sauce, and garlic. Pour in 1 cup of BBQ sauce and cook on HIGH for 5–6 hours or LOW for 8–10 hours.
  5. Shred the beef: Remove beef and shred with two forks, reserving 1 cup of cooking liquid.
  6. Finish with more sauce: Return shredded beef to the slow cooker, stir in 1 cup of fresh BBQ sauce and reserved drippings, then serve warm.

Notes

Browning the beef adds great flavor, but you can skip it if short on time. Leftovers can be stored in the fridge for 3–4 days or frozen for up to 3 months.
