Slow Cooker Brown Sugar Garlic Chicken

  • 2 pounds boneless, skinless chicken thighs (or breasts)
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth
  • 34 cloves garlic, minced
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. In a mixing bowl, combine brown sugar, soy sauce, chicken broth, minced garlic, salt, and pepper. Mix well until the brown sugar is mostly dissolved.
  2. Place the chicken thighs in the slow cooker, spreading them evenly at the bottom.
  3. Pour the sauce over the chicken, ensuring all pieces are coated.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender.
  5. If thickening the sauce, mix cornstarch with water and add it in the last 30 minutes of cooking.
  6. Shred the chicken with two forks or serve it whole, spooning sauce over the top before serving.

Notes

Serve with rice, noodles, or vegetables. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
