Slow Cooker Cowboy Stew

A hearty and comforting slow cooker stew with tender beef, potatoes, carrots, and a mix of beans and corn that fills your home with delicious aromas.

Ingredients

Scale
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 cup frozen corn
  • 1 cup green beans, trimmed and cut into pieces

Instructions

  1. In a large slow cooker, add the beef chuck, diced potatoes, sliced carrots, chopped onion, and minced garlic.
  2. Pour in the diced tomatoes with their juices and the beef broth. Add the Worcestershire sauce, chili powder, cumin, salt, and pepper.
  3. Stir everything together until the beef and vegetables are well coated with the seasonings and liquid.
  4. Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until the beef is very tender and the vegetables are cooked through.
  5. About 30 minutes before serving, stir in the frozen corn and green beans. Cover and continue cooking until the vegetables are heated through and tender-crisp.
  6. Taste and adjust seasoning with additional salt, pepper, or chili powder if needed. Serve hot in bowls with your favorite sides.

Notes

For a thicker stew, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the stew near the end of cooking. You can also substitute the beef with cubed firm tofu or extra beans for a vegetarian option.
