Slow Cooker French Dip Sandwiches

Rich and juicy slow-cooked beef chuck roast served in hoagie rolls with melted provolone cheese and au jus for dipping.

  • 2 pounds beef chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 4 hoagie rolls
  • 8 slices provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the beef chuck roast in the slow cooker and add the sliced onion and minced garlic on top.
  2. In a separate bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, dried thyme, black pepper, and salt.
  3. Pour the broth mixture over the roast and onions in the slow cooker.
  4. Cover and cook on Low for about 8 hours or on High for about 4 hours until the beef is very tender.
  5. Remove the roast and shred the meat using two forks.
  6. Return the shredded beef to the slow cooker and stir to combine with the juices.
  7. Preheat the broiler and slice the hoagie rolls, placing them cut-side up on a baking sheet.
  8. Pile shredded beef onto each roll and top with 2 slices of provolone cheese.
  9. Broil for 2–3 minutes until cheese is melted and bubbly.
  10. Ladle hot au jus into small bowls and serve sandwiches with au jus for dipping.

Notes

For best texture, serve sandwiches hot and allow dipping in warm au jus. Leftovers can be refrigerated or frozen for later use.
