  • 1 lb baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 cup beef broth
  • 1 tbsp olive oil
  • 1 tsp Worcestershire sauce (optional, for deeper flavor)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides for 2-3 minutes per side until golden brown.
  2. Place the halved baby potatoes at the bottom of the slow cooker, then layer the seared beef on top.
  3. In a bowl, mix the melted butter, minced garlic, onion powder, paprika, thyme, rosemary, salt, black pepper, and Worcestershire sauce. Pour over the beef and potatoes.
  4. Pour the beef broth into the slow cooker, cover, and cook on Low for 6-8 hours or High for 3-4 hours.
  5. Gently stir everything, garnish with fresh herbs if desired, and serve hot with your favorite sides.

Notes

Searing the beef first enhances the flavor. For extra richness, add a splash of cream before serving. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
