Smoky Chicken, Bean & Rice Soup

A warm and hearty soup featuring chicken, black beans, and rice with savory spices.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, rinsed and drained
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until soft, about 3 to 4 minutes.
  2. Add the shredded chicken, black beans, diced tomatoes, smoked paprika, and chicken broth. Mix well.
  3. Bring to a boil over medium-high heat, then reduce heat and let it simmer for 15 minutes.
  4. Stir in the cooked rice and heat through for about 2 to 3 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped cilantro.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for 2 to 3 months.
