Tender and juicy grilled chicken legs coated with a flavor-packed rub and served with a homemade BBQ sauce.

Ingredients

Scale
  • 45 pounds chicken legs (patted dry)
  • 2 tablespoons brown sugar (packed)
  • 2 tablespoons kosher salt
  • 2 tablespoons paprika
  • 1/2 tablespoon ground cumin
  • 1 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 3/4 cup brown sugar (packed)
  • 3/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/2 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon kosher salt

Instructions

  1. Preheat your gas grill on high and close the lid to reach 400°F.
  2. In a bowl, mix the chicken rub ingredients: brown sugar, kosher salt, paprika, cumin, black pepper, and cayenne.
  3. Rub the mixture generously over the chicken legs.
  4. Reduce two burner settings to low and place chicken over them; keep other burners on high.
  5. Cover and grill for 20 minutes.
  6. While grilling, mix BBQ sauce ingredients in a saucepan and simmer for 15 minutes.
  7. Check the chicken after 20 minutes and flip; cover and grill for an additional 20 minutes.
  8. Use an instant-read thermometer to ensure chicken is at 165°F.
  9. Remove and brush with BBQ sauce before serving.

Notes

For deeper flavor, marinate chicken in the rub for a few hours or overnight. Let chicken rest before serving to maintain juiciness.
