Smoky Jalapeño Popper Meatloaf

A unique twist on classic meatloaf, combining ground beef, creamy jalapeño flavors, and a crunchy bacon topping.

  • 2 lbs ground beef (80/20 blend)
  • 1 cup breadcrumbs
  • 1 cup cream cheese
  • 1 cup diced jalapeño peppers
  • 1 cup shredded cheddar cheese
  • 8 slices of bacon
  • 2 eggs
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 cup ketchup (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, cream cheese, diced jalapeño peppers, shredded cheddar cheese, eggs, diced onion, garlic powder, salt, black pepper, and smoked paprika.
  3. Mix all the ingredients together until well combined, taking care not to overmix.
  4. Form the mixture into a loaf shape and place it in a baking dish.
  5. Wrap the loaf with bacon slices, covering it completely.
  6. Spread ketchup over the top of the meatloaf.
  7. Bake in the oven for 1 hour until the internal temperature reaches 160°F (70°C).
  8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

Customize the heat level by adjusting the amount of jalapeños used.
