Snickerdoodle Banana Bread

A delightful twist on two classic treats, combining the moist texture of banana bread with the spiced flavor of snickerdoodles.

  • 3 ripe bananas, mashed
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ cup milk
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a large mixing bowl.
  3. Add granulated sugar, brown sugar, melted butter, eggs, and vanilla extract to the bananas and mix until smooth.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Mix granulated sugar and cinnamon for the topping and sprinkle over the batter.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and enjoy!

Notes

Serve plain or with butter, cream cheese, or ice cream. It can also be enjoyed as French toast.
