Snickerdoodle Banana Bread

A delightful twist on banana bread and snickerdoodles, combining moist banana bread with warm cinnamon flavors.

  • 3 ripe bananas, mashed
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ cup milk
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract to the mashed bananas and stir until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Mix the granulated sugar and cinnamon for the topping and sprinkle it evenly over the batter.
  8. Bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
  9. Let the bread rest in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Slice and enjoy your snickerdoodle banana bread!

Notes

Serve plain, with butter, or as French toast. Can be frozen for up to 3 months.
