Snowy Coconut Cranberry Mojito Mocktail

A refreshing and festive mocktail that combines coconut creaminess with bright cranberry flavors, perfect for holiday celebrations.

Ingredients

  • Fresh mint leaves, about 8 to 10 per glass
  • 1 to 2 teaspoons sugar or simple syrup, to taste
  • 1 fresh lime, halved
  • 3 to 4 tablespoons full-fat coconut milk or coconut cream
  • 2 to 4 tablespoons cranberry juice, unsweetened
  • Club soda or sparkling water, to top
  • Crushed ice
  • Optional garnish: shredded coconut for the rim, fresh cranberries, extra mint

Instructions

  1. Gently clap fresh mint leaves between your palms and place them in the bottom of a sturdy glass.
  2. Add sugar or simple syrup and squeeze half a lime over the mint.
  3. Use a muddler or the back of a spoon to press gently to release the mint oils.
  4. Add a splash of coconut milk or coconut cream and a handful of crushed ice.
  5. Top with club soda or sparkling water and stir gently.
  6. Pour cranberry juice over the top for a pink ombre effect and add more sparkling water for fizz.
  7. Rim the glass with shredded coconut, if desired, and garnish with frozen cranberries and a sprig of mint.

Notes

Chill your glass before serving for a frosty experience. Adjust sweetness with sugar or simple syrup to taste.
