Southwest Chicken Salad

A vibrant salad featuring grilled chicken, black beans, corn, and a zesty chipotle-lime dressing, perfect for lunch or dinner.

Ingredients

  • 1 pound chicken breast
  • 1 can black beans, rinsed and drained
  • 1 cup sweet corn (fresh, frozen, or canned)
  • 4 cups chopped romaine lettuce
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup chipotle-lime dressing
  • Salt and pepper to taste

Instructions

  1. Grill the chicken breast until fully cooked, then slice it.
  2. In a large bowl, combine the black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
  3. Add the sliced chicken on top.
  4. Drizzle with the chipotle-lime dressing, and season with salt and pepper to taste.
  5. Toss gently to combine and serve immediately.
