Spiced Apple Cupcakes with Cinnamon Icing

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups peeled and diced apples
  • 1 cup powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract (for icing)
  • ½ tsp ground cinnamon (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line cupcake pan with cupcake liners.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
  4. In a large bowl, beat softened butter and granulated sugar until fluffy (2-3 minutes).
  5. Add eggs one at a time, mixing well, then stir in vanilla extract.
  6. Gradually mix dry ingredients into wet ingredients until just combined.
  7. Fold in peeled and diced apples.
  8. Divide batter into cupcake liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes. Cupcakes are done when a toothpick inserted comes out clean.
  10. Cool cupcakes in pan for 5 minutes, then transfer to wire rack to cool completely.
  11. For icing, mix powdered sugar, milk, and ½ tsp vanilla until smooth, then add ½ tsp ground cinnamon.
  12. Once cupcakes are cool, frost with cinnamon icing.

Notes

These cupcakes can be customized with nuts or different spices to suit your taste.
