Spiced Pear Chutney

A delightful blend of sweet and savory flavors with pears and warming spices, perfect for enhancing meals or as a gift.

Ingredients

  • 200g demerara sugar
  • 200ml cider vinegar
  • 100ml perry (pear cider)
  • 1 star anise
  • 1 tsp ground cumin
  • 2 red onions, chopped
  • 1 tsp grated ginger
  • 10 firm pears, peeled and chopped into bite-sized pieces
  • Red chillies, halved (and deseeded if preferred)
  • 50g sultanas

Instructions

  1. Start by peeling and chopping the pears into bite-sized pieces. Chop the red onions and grate the ginger. If you are using whole red chillies and wish to lessen the heat, take out the seeds before halving them.
  2. Put the sugar, cider vinegar, perry, star anise, ground cumin, chopped onions, and grated ginger in a large saucepan.
  3. Place the saucepan on medium heat and bring the mixture to a boil. Stir occasionally to help dissolve the sugar.
  4. Once boiling, add the chopped pears and the red chillies to the saucepan.
  5. Reduce the heat to low and let the mixture simmer for about 40 minutes, stirring occasionally until the pears soften and the liquid becomes syrupy.
  6. After 40 minutes, stir in the sultanas, then turn off the heat and let the chutney cool slightly.
  7. Spoon the warm chutney into sterilized jars, leaving some space at the top of each jar.
  8. Allow the chutney to cool at room temperature before sealing the jars with lids.

Notes

Store in a cool, dark place and refrigerate once opened. The chutney can also be frozen for up to six months.
