Spiced Pistachio Milk Latte with Cardamom-Fig Syrup

A comforting latte blending creamy pistachio milk with warm spices and sweet cardamom-fig syrup.

Ingredients

  • 2 cups pistachio milk
  • 2 cinnamon sticks
  • 3 whole star anise
  • 1 tablespoon whole cloves
  • 1 cup water
  • 1 cup granulated sugar
  • 4 fresh figs, halved
  • 1 tablespoon cardamom pods
  • Ground coffee or espresso
  • Ground cinnamon, for dusting

Instructions

  1. In a saucepan, pour in the pistachio milk and add the cinnamon sticks, star anise, and whole cloves.
  2. Warm the mixture gently over low heat for about 30 minutes, stirring occasionally.
  3. Strain the milk to remove the spices and froth it until creamy.
  4. In another saucepan, combine 1 cup of water and 1 cup of granulated sugar over medium heat, stirring until the sugar dissolves.
  5. Add the halved figs and cardamom pods; simmer gently for 30 minutes, then strain the syrup.
  6. In mugs, add 1 tablespoon of cardamom-fig syrup and brew two shots of espresso directly into each mug.
  7. Top each mug with the frothed spiced pistachio milk and dust with ground cinnamon.
  8. Serve warm and enjoy!

Notes

Store any leftover spiced pistachio milk or syrup in the refrigerator for up to a week. Consider freezing syrup in ice cubes for later use.
