Sticky Chicken Rice Bowls

  • 2 cups cooked rice
  • 1 lb chicken thighs, diced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to create the sauce.
  2. In a skillet, heat a little oil and cook the diced chicken until browned and cooked through.
  3. Pour the sauce over the chicken and cook for a few more minutes until thickened.
  4. Serve the sticky chicken over cooked rice, garnishing with chopped green onions and sesame seeds.

Notes

Store leftovers in an airtight container for up to three days. For freezing, separate chicken from rice and store in a freezer-safe bag for up to three months.
