Strawberry Cake Truffles

Delightful Strawberry Cake Truffles made from strawberry cake and cream cheese, covered in chocolate. Perfect for any occasion!

  • 1 box strawberry cake mix
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/4 cup milk
  • 1 cup powdered sugar
  • 1/4 cup cream cheese, softened
  • 1 teaspoon vanilla extract
  • Pink chocolate melts or white chocolate melts (for coating)
  • Sprinkles (optional, for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a baking pan.
  2. In a mixing bowl, combine the strawberry cake mix, melted butter, eggs, and milk. Mix until well combined.
  3. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Let it cool completely.
  4. Once cooled, crumble the cake into a large bowl.
  5. In another bowl, mix together the powdered sugar, cream cheese, and vanilla extract until smooth.
  6. Combine the cream cheese mixture with the crumbled cake and mix until well combined.
  7. Roll the mixture into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  8. Freeze the truffles for at least 30 minutes to set.
  9. Melt the pink chocolate or white chocolate melts according to package instructions.
  10. Dip each truffle into the melted chocolate and place them back on the parchment paper.
  11. If desired, sprinkle with additional sprinkles before the chocolate hardens.
  12. Let the truffles set completely before enjoying or packaging in gift bags.

Notes

Store leftovers in an airtight container in the fridge for up to a week. You can freeze them for up to three months.
