Strawberry and Chamomile Paloma Mocktail

A refreshing mocktail combining sweet strawberries and chamomile with tart grapefruit, perfect for warm weather gatherings.

Ingredients

  • 3/4 cup water
  • 1/3 cup honey
  • 12 chamomile tea bags
  • 80 ml fresh grapefruit juice
  • 24 tbsp chamomile honey syrup (to taste)
  • 60 ml Belvoir Farm Elderflower Cordial
  • 4 fresh strawberries, sliced
  • Sparkling water (to taste)
  • Crushed ice

Instructions

  1. In a small saucepan, combine 3/4 cup water and 1/3 cup honey. Bring to a low boil over medium heat.
  2. Once boiling, reduce heat and let simmer for 1 minute. Remove from heat and add chamomile tea bags, cover, and steep for 5-10 minutes.
  3. Remove tea bags and let syrup cool completely. Transfer to an airtight container and store in the fridge.
  4. In a glass, add grapefruit juice, chamomile honey syrup, and elderflower cordial.
  5. Add sliced strawberries and gently muddle to release juices. Fill the glass with crushed ice.
  6. Top with sparkling water to taste and stir gently to combine.
  7. Garnish with fresh chamomile flowers and extra strawberry slices, if desired. Serve immediately.

Notes

This mocktail is best enjoyed fresh. Store leftover chamomile honey syrup in the fridge for up to a week.
