Strawberry Jam with Honey Whipped Goat Cheese

A delightful treat combining sweet strawberries and creamy goat cheese, perfect for brunch or as a unique appetizer.

  • 6 cups fresh sliced strawberries
  • 2 teaspoons lemon juice
  • 24 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • Kosher salt and black pepper to taste
  • 1 log (10 ounces) goat cheese
  • 3 ounces cream cheese, at room temperature
  • 23 tablespoons honey
  • Fresh basil and thyme, for serving

Instructions

  1. To make the jam, add the sliced strawberries and lemon juice to a medium pot and set over high heat.
  2. Once boiling, mash the strawberries and cook for 5-8 minutes until reduced by about one-third.
  3. Mix in honey and balsamic vinegar, then remove from heat and let cool.
  4. To make the goat cheese, combine goat cheese, cream cheese, honey, and a pinch of salt in a food processor and pulse until smooth.
  5. To serve, spread warm jam onto grilled bread and top with the whipped goat cheese, garnished with basil, thyme, and flaky sea salt.

Notes

Jam can be stored in an airtight container in the refrigerator for 1-2 weeks. The goat cheese can be kept in the fridge for up to 3 days.
