Strawberry Rhubarb Spritzer

A refreshing drink bursting with fruity flavors, perfect for summer gatherings or a light sip at home.

Ingredients

  • 6 oz of chopped strawberries
  • 5.5 oz of sliced rhubarb
  • 1/2 cup of water
  • 1 cup and 1 tbsp of sugar
  • 3 + 1/4 teaspoons of vanilla extract (or 1.5 tablespoons of vanilla sugar)
  • 1/8 cup of lemon juice
  • 1/4 cup of strawberry rhubarb syrup
  • 12 oz of mineral water

Instructions

  1. Wash and clean the rhubarb. Slice it into small pieces.
  2. Wash, dehull, and chop the strawberries into small bits.
  3. Place both the strawberries and rhubarb into a medium saucepan with 1/2 cup of water.
  4. Bring the mixture to a boil and then reduce the heat to medium.
  5. Cook for about 10 minutes, stirring occasionally, until everything becomes very soft.
  6. Place a fine mesh sieve over a medium bowl. Pour the strawberry and rhubarb mixture into it.
  7. Press the liquid out of the fruit and vegetable mush using a ladle and discard the leftover solids.
  8. Pour the liquid back into the medium saucepan.
  9. Add the sugar, vanilla extract, and lemon juice to the liquid.
  10. Cook on medium-low for another 5 minutes, stirring often, until the sugar is completely dissolved.
  11. Taste as it cooks to ensure it’s sweet enough for your preference.

Notes

For a healthier take, use natural sweeteners like stevia or monk fruit instead of sugar. The syrup can be stored in the fridge for up to one week.
