Strawberry Shortcake Cheesecake Bars

A delightful dessert combining creamy cheesecake and strawberry shortcake flavors, topped with crushed Oreo cookies for added sweetness.

  • 20 Strawberry Shortcake Oreo Cookies
  • 3 Tbsp unsalted butter, melted
  • 12 large strawberries
  • 16 oz. cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 Tbsp all-purpose flour
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • 12 Strawberry Shortcake Oreo Cookies, divided

Instructions

  1. Preheat the oven to 325°F. Line an 8-inch square baking pan with aluminum foil and coat with cooking spray.
  2. In a food processor, blend 20 Strawberry Shortcake Oreo Cookies into crumbs. Mix with melted butter and press into the bottom of the prepared pan. Bake the crust for 10 minutes.
  3. Blend 12 strawberries in a blender to create about 3/4 cup of strawberry puree.
  4. In a mixer, beat cream cheese until fluffy. Add sugar, flour, salt, and vanilla extract, and mix until smooth.
  5. Add eggs one at a time, mixing well after each addition. Stir in the strawberry puree.
  6. Pour the cheesecake filling over the baked crust and sprinkle with crumbled Oreo Cookies. Bake for 35-40 minutes until edges are golden and filling is slightly jiggly.
  7. Cool completely and refrigerate for at least 2 hours. Lift out using the foil, top with remaining crumbled Oreos, slice, and serve.

Notes

Serve chilled for the best taste. These bars store well in an airtight container for up to a week.
