Sugar Free Blueberry Italian Cream Soda

Ingredients

  • 2 1/4 cups blueberries
  • 1 cup granulated sweetener
  • 1 cup filtered water
  • 1 tsp lemon juice
  • Ice
  • 1 cup club soda
  • 1/4 cup sugar-free blueberry syrup
  • 3 tbsp half & half
  • 1/4 cup whipped cream (optional)

Instructions

  1. Combine 1 cup of filtered water, 1 cup of granulated sweetener, and 1 tsp of lemon juice in a medium-sized saucepan. Stir until mixed.
  2. Add in the 2 1/4 cups of fresh or frozen blueberries and stir gently.
  3. Bring the mixture to a simmer on low-medium heat, stirring occasionally for about 15 minutes.
  4. Mash the blueberries using the back of a wooden spoon or a potato masher, releasing as much juice as possible.
  5. Increase the heat to medium and let it simmer for an additional 8-10 minutes.
  6. Remove the syrup from heat and allow it to cool.
  7. Strain the mixture using a fine mesh strainer to separate the liquid from the blueberry pulp.
  8. Cool the sugar free blueberry syrup in the refrigerator for 1-2 hours before using.
  9. Add 3-4 cubes of ice to your favorite tall glass.
  10. Fill the glass halfway with club soda.
  11. Pour the homemade sugar free blueberry syrup into the glass.
  12. Slowly add the 3 tablespoons of half & half.
  13. Top with whipped cream if desired for an extra creamy treat.

Notes

Best served immediately after preparation to enjoy the fizz from the club soda. Garnish with fresh blueberries or a slice of lemon for a pop of color.
