Sweet Chilli Jam

A flavorful and versatile condiment with a perfect balance of sweetness and spiciness, ideal for enhancing various dishes.

  • 8 red peppers, deseeded and roughly chopped
  • 10 red chillies, roughly chopped
  • Finger-sized piece fresh root ginger, peeled and roughly chopped
  • 8 garlic cloves, peeled
  • 400g can cherry tomatoes
  • 750g golden caster sugar
  • 250ml red wine vinegar

Instructions

  1. Prepare the ingredients by washing and chopping the red peppers and chillies, removing seeds from the red peppers.
  2. Chop the peppers, chillies, ginger, and garlic in a food processor until very finely chopped.
  3. Combine the mixture in a heavy-bottomed pan with cherry tomatoes, caster sugar, and red wine vinegar.
  4. Cook over medium-high heat until boiling, skimming off any scum that rises to the surface.
  5. Reduce the heat to a simmer and cook for about 50 minutes, stirring occasionally.
  6. Check the jam’s consistency after 50 minutes; cook for another 10-15 minutes until thick.
  7. Remove from heat, let cool slightly, then transfer to sterilized jars. Leave space at the top of each jar and cool completely before sealing.

Notes

This Sweet Chilli Jam will keep for up to three months in a cool, dark cupboard. Refrigerate after opening for freshness.
